Makes 6 toasts
For Cheese , Olive and Jalapeno Toast
6 bread slices
3 tsp soft butter for spreading
To Be Mixed Into A Mixture
3/4 cup grated mozzarella cheese
2 tbsp cheese spread
1/4 cup finely chopped black olives
1 tbsp finely chopped jalapenos
1/2 tsp dried mixed herbs
1 tbsp milk
salt to taste
- Method
- To make cheese, olive and jalapeno toast, spread ½ tsp butter on each slice and place it on a greased baking tray, with the buttered side facing upwards, and bake it in a pre-heated oven at 200°c (400°f) for 10 minutes or till they turn crisp.
- Remove the bread slices, turn over and spread little mixture evenly over each slice.
- Place all the bread slices again on a baking tray with the mixture side facing upwards. Bake again in a pre-heated oven at 200°c (400°f) for 15 minutes.
- Serve immediately.

For the Topping
- Put the cheese spread in a deep bowl.
- To this, add the grated mozzarella cheese. The reason for adding 2 types of cheeses is that the cheese spread gives creaminess while mozzarella gives the stringy texture.
- Now add the finely chopped black olives. You can even cut them into slices but finely chopped olives are easier to spread on toast.
- Now add the finely chopped jalapenos. We have used the pickled jalapenos as the fresh ones would be very spicy. Both olives and jalapenos add a salty, sour taste to the toast.
- Add the mixed dried herbs. This is a prepacked mix sold which contains dried oregano, parsley, rosemary and thyme.
- Finally add the milk and salt.
- Mix well with a spoon till everything is evenly incorporated. Keep aside.
How to Proceed for the Toast
- Grease the baking tray with a little butter.
- Spread ½ tsp of butter on each bread slice and place it on the baking tray, with the buttered side facing upwards.
- Bake in a pre-heated oven at 200°C (400°F) for 10 minutes or till they turn crisp.
- Turn over the bread slices and spread little mixture evenly over each slice.
- Bake the slices again in a pre-heated oven at 200°C (400°F) for 15 minutes.
- Serve immediately as an evening snack with tomato ketchup or as an accompaniement with pasta dishes like Pasta Genovese.

I have tried all diffrent toppings on a toast but had never tried jalapenos with olives before. I love the way the melted mozerella tastes. Yummm. Such a nice cheesy and tangy taste. Perfect for a cocktail party or even as a snack.
