Pretty potato baskets filled with a tangy rajma filling makes interesting finger food. Baked with cheese on top, they look irresistible and taste yummy when served hot. A filling snack that comes packed with carbohydrates and proteins.

Makes 12 baskets
For The Rajma Filling
1/2 cup soaked , boiled and coarsely mashed rajma (kidney beans)
3 tbsp tomato ketchup
1/2 tsp chilli sauce
2 tbsp finely chopped coriander (dhania)
salt and freshly ground black pepper powder to taste
Other Ingredients
6 baby potatoes , blanched , halved and scooped
6 tbsp grated processed cheese for the topping
For The Garnish
a few sprigs of coriander (dhania)

- For the rajma filling
- Combine all the ingredients in a bowl and mix well.
- Divide the filling into 12 equal portions and keep aside.

- Fill each potato half with a portion of the rajma filling, top with ½ tbsp of cheese and bake in a pre-heated oven at 200°c (400°f) for 5 minutes.
- Serve hot garnished with coriander sprigs.
