3/4 16-ounce package capellini or thin spagetti
1/2 pound shitake or button mushrooms (khumbh)
2 medium sized carrots
1/2 pound chinese pea pods
1 tbsp salad oil
1 tbsp minced ginger (adrak) or 1 teaspoon ginger (adrak) paste
1/4 cup soy sauce
One 13 3/4 -to 14 1/2-ounce can vegetable broth
1/4 tsp crushed black pepper

Method

  1. Prepare pasta as label directs,but do not use salt in water.drain.
  2. Remove tough stems from shiitake mushrooms or trim stem ends of regular mushrooms; slice mushrooms. cut carrot into matchstick-thin strips.remove stem and strings along edges of each pea pod.
  3. In 12 inch skillet over medium-high heat, in hot salad oil, cook ginger and mushrooms until highly browned. stir in soy sauce and cook, stirring quickly and constantly, until mushrooms are tender and liquid is absorbed. stir in carrots and chinese pea pods; cook until tender crisp, about 3 minutes.
  4. To vegetables in skillet, add vegetable broth and 1 cup water, over high heat, heat to boiling. stir in cooked pasta; toss to coat well and heat through. sprinkle with crused red pepper.
