Ingredients

12 sliced brinjal (baingan / eggplant)
1 tsp oil
salt to taste

For The Tomato Sauce
3/4 cup roughly chopped tomatoes
1/2 tbsp roughly chopped garlic (lehsun)
1/4 cup roughly chopped onions
1/2 tsp chilli powder
1/2 tsp dried oregano
1/2 tsp sugar
salt to taste

For the eggplant

  1. Put the oil in a shallow microwave safe dish and microwave on high for about 12 seconds.
  2. Spread the eggplant slices over the hot oil and sprinkle a little salt on top. Cover and microwave on high for 5 minutes.

For the tomato sauce

  1. Combine the tomatoes, onions and garlic in a microwave safe bowl and cover and microwave on high for 5 minutes.
  2. Allow the mixture to cool slightly and blend the mixer till smooth.
  3. Add the chilli powder, oregano, sugar and salt, mix well and microwave on high for 2 minutes.

  2. Cover the serving dish and microwave on high for 1 minute.
  3. Serve immediately.
