A healthy low calorie raitha recipe made with a combination of sweet carrots and curds.
Gajar Koshimbir recipe - How to make Gajar Koshimbir

Makes 2 to 3 servings
3 grated carrot
4 tbsp chopped coriander (dhania)
2 to 3 finely chopped green chillies
2 tbsp freshly grated coconut
1 tbsp lemon juice
sugar to taste
salt to taste
For The Tempering
1 tsp oil
1/2 tsp mustard seeds ( rai / sarson)
2 to 3 curry leaves (kadi patta)
Method
- Method
- Combine the carrots, green chillis, salt, sugar and coconut in a bowl and mix well.
- Add the coriander and lemon juice and mix well. Keep aside.
- Heat the oil for the tempering and add the mustard seeds and curry leaves.
- When the seeds crackle, add this to the carrots and mix well.
- Serve.
