The fabulous cold Spanish soup. Let your guests help themselves to the accompaniments. Omit the cream and olive oil for dieters.
Gazpacho recipe - How to make Gazpacho

Serves 6 to 8.
1 1/2 kgs fresh tomatoes
3/4 tsp worcesterchire sauce
3/4 tsp chilli sauce
2 tbsp powdered sugar
2 tbsp fresh cream
2 tbsp olive oil
1 clove garlic (lehsun) (optional)
salt to taste
Accompaniments
1 capsicum, finely chopped
1 large onion, finely chopped
1 cucumber, finely chopped
1 tomato, finely chopped
3/4 cup bread croutons
Method
- Method
- Put the tomatoes in boiling water for a few minutes.
- Remove the skins.
- Chop and blend in a liquidiser.
- Strain the mixture.
- Add the remaining ingredients and mix well.
- Chill thoroughly.
- Serve in cold cups with accompaniments in separate cups.
