Pizza is such a food that attracts everyone. I thought why shouldn't I try by making the base of traditional recipe that is akki roti. Akki means "Rice" in Kannada. Children run away listening to the name of rice roti so thought of making my innovation to make them eat the traditional food in an innovative way. Try out this recipe. Hope everyone will enjoy.

Ingredients


For The Base
2 cups rice flour (chawal ka atta)
salt to taste
1 tsp cumin seeds (jeera)
1/2 cup grated coconut
1 tbsp chopped coriander (dhania)
1 tbsp finely chopped green chillies
water for binding the dough

For The Topping:
1/2 cup roasted sweet corn kernels (makai ke dane)
1/2 cup sliced mushrooms (khumbh)
1/4 cup sliced onions
1/4 cup sliced capsicum
1 tsp dried oregano
1/2 dried mixed herbs
1 tsp dry red chilli flakes (paprika)
1 tsp freshly ground black pepper (kalimirch)
2 tsp oil
salt to taste

Other Ingedients
oil for shallow frying the rotis
tomato salsa sauce as required
grated processed cheese and mozzarella cheese as required

Method
For the base

    For the base
  1. In a bowl mix all the ingredients and knead into a medium soft dough using enough water.
  2. Divide the dough into four equal parts. Roll to make a ball.
  3. Heat an iron pan on a low flame and grease with oil and place 1 rice dough ball in the centre of the pan. Tap the ball with greased finger tips to make a medium thick roti.
  4. Sprinkle oil on the edges and cook on a medium flame covered with a plate till it gets cooked.
  5. Slowly remove it with the help of a spatula and keep aside.
  6. Repeat remaining dough balls to make 3 more rotis. Keep aside.

For the stuffing

  1. Heat oil in a kadhai and add onions and saute till pink.
  2. Add the capsicum and cook for 1 minutes. Then add mushrooms and let it cook again for another 3 minutes, then add the roasted corn, mix well.
  3. Add salt, pepper powder, oregano, chilli flakes, mixed herbs and toss.

  1. Place a roti on a flat dry surface and evenly spread some salsa sauce over it
  2. Sprinkle some grated mozzarella and processed cheese evenly over it.
  3. Then spread a portion of the topping over.
  4. Place the pizza on a pre-heated non-stick tava (griddle), cover it with a lid cook till cheese melts.
  5. Repeat steps 1 to 4 with the remaining rotis to make 3 more pizzas.
  6. Cut into equal slices and serve immediately.
