A basic thai paste made using green herbs and spices which is used as a base in various thai curries and soups.

Ingredients

5 tbsp roughly chopped green chillies
6 clove garlic (lehsun)
1/4 cup finely chopped onions
25 galangal (thai ginger)
6 stalks coriander (dhania) with the leaves
1/2 tsp grated lemon rind
1 tsp lemon juice
1 tbsp whole coriander (dhania) seeds , ground
2 tbsp cumin seeds (jeera) , ground
2 stalks lemongrass (hare chai ki patti)
salt to taste

    Method
  1. Combine all the ingredients and blend in a mixer to a smooth paste, adding 1/3 cup of water. Use as required.

  1. For a more authentic flavour, replace 1 tsp lemon juice with 1 to 2 kafir lime leaves and ½ tsp of lemon juice while blending.
  2. If you can’t find galangal (thai ginger), use regular ginger instead.
