Green Pea and Spring Onion Soup

This recipe brings together the juicy textures and fresh flavours of two ever-popular ingredients – green peas and spring onions.

Makes 3 servings
1 cup green pea pods
3/4 cup chopped spring onion whites and greens
2 tsp butter
1/2 cup finely chopped onions
3/4 cup chopped cabbage
1/2 cup milk
salt and freshly ground black pepper (kalimirch) to taste
- Method
- Heat the butter in a deep non-stick pan, add the green pea pods, spring onions and onions and sauté on a medium flame for 1 minute.
- Add the cabbage and 2 cups of water, mix well and cover with a lid and cook on a medium flame for 6 minutes, while stirring occasionally.
- Cool and blend in a mixer along with 1 cup of water till smooth.
- Strain the mixture using a strainer.
- Transfer the mixture into a deep non-stick pan, add the milk, salt and pepper, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
- Serve hot.
