Green Tomato and Bhujia Vegetable

Bhujia is generally considered a tea-time snack or an addition to chaats and other savoury preparations. Have you ever tried mixing it into a subzi? In this innovative variant of the traditional Gujarati preparation Sev Tameta nu Shaak, we bring together two unusual ingredients into a quick vegetable dish, which is so easy you can prepare it as a surprise for sudden guests too. Make the Green Tomato and Bhujia Vegetable just before serving, else the bhujia will become soggy and the unique texture and mouth-feel of the dish will be lost.

Makes 4 servings
3 cups roughly chopped green tomatoes
1/2 cup bhujia
1 tbsp oil
1/2 tsp cumin seeds (jeera)
1/4 tsp asafoetida (hing)
1/2 tsp finely chopped ginger (adrak)
1/2 tsp turmeric powder (haldi)
1 1/2 tsp coriander-cumin seeds (dhania-jeera) powder
1/2 tsp chilli powder
1 tsp sugar
salt to taste
- Method
- Heat the oil in a non-stick kadhai and add the cumin seeds.
- When the seeds crackle, add the asafoetida and ginger and sauté on a medium flame for a few seconds.
- Add the green tomatoes, turmeric powder, coriander-cumin seeds powder, chilli powder, sugar and salt and mix well. Cover with a lid and cook on a medium flame for 8 to 10 minutes or till the tomatoes are cooked, while stirring occasionally.
- Add the bhujia and mix well.
- Serve immediately.
