An assortment of spices gives this sauce a flavour that is not singularly hot but holistically spicy, with a good mix of flavours. You can make a batch of this sauce and store it in an airtight container in the freezer for over 15 days.

Use it to make tongue-tickling treats like Potatoes in Harissa Sauce , or serve as an accompaniment for snacks . You can serve it with Mint and Masoor Tikki or Lehsuni Matki Palak Tikki .

Harissa Sauce, Spicy Red Chilli Sauce recipe - How to make Harissa Sauce, Spicy Red Chilli Sauce

Soaking time:  1 hour   Preparation Time:    Cooking Time:    Total Time:    Makes 1.5 cups

Ingredients

1 1/2 cups dry red chillies (pandi) , deseeded and broken into pieces
2 tbsp cumin seeds (jeera)
1 1/2 tbsp coriander (dhania) seeds
1 1/2 tbsp fennel seeds (saunf)
1 tbsp caraway seeds (shahjeera)
1 tbsp roughly chopped garlic (lehsun)
salt to taste
3 tbsp olive oil
2 tbsp white vinegar

Method
    Method
  1. Soak the red dry chillies along with enough hot water in a deep bowl, cover with a lid and keep aside to soak for 1 hour.
  2. Drain the chillies and keep 1 cup of the chilli water aside.
  3. Combine the cumin seeds, coriander seeds, fennel seeds and caraway seeds in a small non-stick pan and sauté on a medium flame for 3 minutes.
  4. Cool and blend in a mixer till coarse.
  5. Add the garlic, soaked chillies, salt and 1 cup of the chilli water and blend till smooth.
  6. Add the olive oil and vinegar and blend again.
  7. Serve with any starter or store in an air-tight container in the freezer for 15 days. Use as required.

This spicy sauce recipe is so good I often make this and tore it, when guests come i add it to the deep-fried potatoes or at times also add it in breads with other ing and serve to my guests. The spice level is very high here so i add little cheese and fresh cream to balance it out.
