Makes 4 to 6 servings
2 cups blanched spinach (palak)
1/2 cup chopped coriander (dhania)
1/4 cup chopped mint leaves (phudina)
1/2 cup boiled green peas
1/2 cup boiled sweet corn kernels (makai ke dane)
1/2 cup blanched and chopped capsicum
1/2 cup paneer (cottagte cheese) cubes
1/2 cup tomato puree
4 to 5 chopped green chillies
salt to taste
1/4 tsp turmeric powder (haldi)
1/4 tsp cumin seeds (jeera)
2 tbsp ghee
Method
- Method
- Combine the spinach, mint, coriander and green green chillies and blend in a mixer till smooth puree.
- Keep aside.
- Heat the ghee in a microwave safe bowl.
- Add the green peas, corn, capsicum and paneer cubes and salt, mix well and microwave on high for 30 seconds.
- Add 1/2 cup tomato puree and microwave on high for 2 minutes.
- Add the turmeric powder, salt and cumin seeds powder, mix well and microwave on high for 30 seconds.
- Add the prepared spinach puree and microwave on high for 2 minutes.
- Serve hot.
