Hawaiian Fruit and Coconut Salad

It is a brilliant idea to combine tender coconut meat cubes with juicy fruits, because their flavours and textures are so contrasting that they bring out the best qualities of each other!
Potato cubes and cheese cubes add to this fine balance, while a luscious dressing of curds and cream flavoured with lemon and mustard make the Hawaiian Fruit and Coconut Salad a perfect treat for the palate!
This salad is delicious served with pasta, or serve with soup and bread for lunch.

Makes 4 servings
1 cup fresh tender coconut meat cubes
1/2 cup fresh pineapple cubes
1/2 cup apple cubes (unpeeled)
1/2 cup boiled potato cubes
1/4 cup processed cheese cubes
To Be Mixed Into A Dressing
1/4 cup thick curds (dahi)
1/2 tbsp lemon juice
1/4 cup fresh cream
1/4 tsp mustard (rai / sarson) powder
salt and freshly ground black pepper (kalimirch) to taste
- Method
- Combine all the ingredients along with the dressing in a deep bowl and toss well.
- Refrigerate for at least 30 minutes and serve chilled.
