Healthy Subzi with Spinach recipe - How to make Healthy Subzi with Spinach

Makes 4 serving
1 cup spinach (palak) puree
1/2 cup chopped capsicum
1/2 cup broccoli florets
1/2 cup potato cubes
1/2 cup babycorn , sliced
1/2 cup green peas
1/2 cup sweet corn kernels (makai ke dane)
salt to taste
1/2 tsp coriander (dhania) powder
1/2 tsp mustard seeds ( rai / sarson)
1/2 tsp cumin seeds (jeera)
1/2 tsp red chilli powder
1/4 tsp garam masala
1/4 tsp turmeric powder (haldi)
1 tbsp oil
Method
- Method
- Boil all the vegetables except capsicum and keep aside.
- Heat the oil in a pan, add the mustard Seeds, cumin seeds, coriander powder and turmeric powder.
- When the seeds crackle, add the capsicum and saute for 5 to 7 minutes then add all the boiled vegetables and cook for 2 minutes.
- Add the chilli powder, salt, and spinach puree, mix well and cook for another 2 minutes and add the garam masala, mix well and cook for 1 more minute.
- Serve hot with rice or any Indian bread.
