Herb Stuffed Tomatoes

Bright red, daintily small tomatoes are baked with a stuffing of herbs, spices and bread crumbs to make a droolworthy starter !
The Herb Stuffed Tomatoes is very attractive to look at, and nobody can resist the temptation to pop one into their mouth – and once they do, the amazing taste takes over.
A large dollop of butter is also added to the herby tomato stuffing, which gives it a rich mouth-feel and buttery taste. Serve this starter immediately after preparation.

Makes 10 stuffed tomatoes
10 small sized tomatoes
To Be Mixed Together In A Herb Mixture
1 tbsp finely chopped parsley
1 tsp dried basil
1/2 tsp dry red chilli flakes (paprika)
1/2 tbsp finely chopped garlic (lehsun)
2 tbsp bread crumbs
1 tbsp olive oil
1 tbsp melted butter
salt to taste
- Method
- Cut the tops of each tomato, scoop out the center pulp along with the seeds and roughly chop it. Keep the scooped tomato shells and the tomato mixture aside.
- Combine the tomato mixture and herb mixture in a deep bowl and mix well.
- Divide this herb stuffing into 10 equal portions and stuff each scooped tomato shell with a portion of the stuffing.
- Arrange the stuffed tomatoes on a greased baking tray and bake in a pre-heated oven at 200°c (400°f) for 10 minutes.
- Serve immediately.
