Mexican Bean Soup is a wholesome soup which gives you all the nutrients from a single bowl. It is quite filling especially when taken with Corn Chips.

Makes 4 serving
2 cups tomato puree
1 cup boiling water
1 cup boiled rajma (kidney beans)
1/2 cup boiled hakka noodles
1/2 cup boiled and chopped babycorn
1 tsp chopped jalepenos
1 tsp chopped mint leaves (phudina)
1 tbsp oil
1 tsp tomato ketchup
salt to taste
1 tsp sugar
1 tsp soy sauce
freshly ground black pepper (kalimirch) powder to taste
corn chips to serve
Method
- Method
- Add 1 tsp of soy sauce and toss the noodles so they do not stick to each other.
- Heat oil in a pan and add mint leaves, jalapenos, babycorn and rajma and saute well.
- Add the salt,pepper,sugar to it.
- Add tomato puree,boiling water and tomato ketchup and bring the soup to a boil.
- Add the boiled noodles and mix well.
- Serve hot.
