Ingredients


For Kalmi Vada
1 cup chana dal (split bengal gram) , soaked for 3 hours and drained
1 inch ginger (adrak)
4 to 5 garlic (lehsun) cloves
3 green chillies , chopped
1 tsp coarsely crushed fennel seeds (saunf)
1 tsp chilli powder
2 tsp coriander-cumin seeds (dhania-jeera) powder
a pinch of asafoetida (hing)
1 1/2 tbsp lemon juice
1 tsp sugar
1/4 cup finely chopped coriander (dhania)
1/2 cup shredded spinach (palak)
salt to taste
oil for frying

    For kalmi vada
  1. To make {span class="bold1"}kalmi vada recipe{/span}, combine the soaked chana dal, ginger, garlic and green chillies in a mixer jar.
  2. Blend it to a coarse mixture without adding any water. Transfer the mixture into a deep bowl.
  3. Add all the remaining ingredients and mix well. Divide the mixture into 8 equal portions.
  4. Take a portion of the mixture and shape it into round, flat vada using wet hands.
  5. Heat the oil in a deep non-stick kadhai and deep-fry a few vadas at a time on a medium flame, till they turn light golden brown in colour from both the sides.
  6. Drain on an absorbent paper. Cut each vada vertically into 3 slices.
  7. Again deep fry a few slices on a medium flame, till they turn golden brown and crispy from both the sides.
  8. Drain on an absorbent paper. Repeat steps 6 to 8 to deep fry remaining vada slices.
  9. Serve {span class="bold1"}kalmi vada{/span} immediately with green chutney.

Its so simple.. I was looking for a snack recipe and came across this recipe.. Just loved it.. The saunf and coriander seeds add a distinctive taste to the vadas.. They are a bit spicy and tastes super with green chutney..!
