Kanji Vada is a Rajasthani delicacy of moong dal vadas immersed in tangy mustard flavoured liquid. The 'kanji' or 'rai ka pani' as it is known needs to be prepared a day in advance so that all the flavours mellow down. The vadas are added the following day. Kanji Vada are a popular snack sold on the streets throughout Rajasthan especially during Holi.

Pyaaz ki Kachori
Kachori – the list is endless. Pyaaz ki kachori, is a popular local breakfast dish in Rajasthan and sold at most 'namkeen' shops in Rajasthan. It originated in the Jodhpur region. They are crispy, flaky on the outside with an authentic filling of onions and spices in the inside. You can relish it with imli chutney and green chutney!
Rajasthani Shahi Raj-kachori
Also, there is Shahi raj kachori, which is a popular chaat recipe . The deep-fried kachori is stuffed with boiled potato and legumes and drizzle with curd, chutney and spices. Other such chaat recipe is Stuffed dahi vada where the vada is innovatively stuffed with dryfruits and topped off with curd,chutney and spices.
Spicy Urad Dal Puris
Rajasthani's also make delicious, scrumptious puri's by stuffing them with a flavorful mixture. Try these spicy urad dal puri with sweet pickle or these matar ki kachori with prominent flavour of nigella seeds.
Snacks like Bikaneri bhujia and suhaali can be made prior consumption, stored in jars and relished with a cup of tea!
