    For kathal ki sabzi
  1. To make {span class="bold1"}kathal ki sabzi{/span}, heat 2 tbsp oil in the pressure cooker and add the jackfruit cubes.
  2. Sauté on medium flame for 2 to 3 minutes till golden brown in colour. Remove in a plate and keep aside.
  3. Heat the remaining 2 tablespoons of oil, add cinnamon, cloves, black peppercorn, bayleaf, pandi chili and cumin seeds in a pressure cooker and sauté on a medium flame for a few seconds.
  4. Add the ginger, garlic and onions sauté on a medium flame for 5 minutes.
  5. Add the tomato pulp and prepared masala paste, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
  6. Add the sautéed jackfruit, salt and 1½ cups of water, mix well and pressure cook for 2 whistles.
  7. Allow the steam to escape before opening the lid.
  8. Serve {span class="bold1"}kathal ki sabzi{/span} hot garnished with coriander.

  1. In a small bowl, add ¼ cup fresh curd.
  2. Add ¼ tsp turmeric powder.
  3. Add 2 tsp chili powder.
  4. Add 1 tsp cumin seeds (jeera) powder.
  5. Add 1 tsp coriander (dhania) powder.
  6. Add ½ tsp garam masala.
  7. Add 5 tbsp of water.
  8. Mix well and keep aside.

  12. Sauté on a medium flame for a few seconds.
  13. Add ½ tbsp finely chopped ginger (adrak).
  14. Add 1 tbsp chopped garlic (lehsun).
  15. Add 1 cup sliced onions.
  16. Sauté on a medium flame for 5 minutes.
  17. Add ½ cup tomato pulp.
  18. Add the prepared masala paste.
  19. Mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
  20. Add the sautéed jackfruit.
  21. Add salt to taste.
  22. Add 1½ cups of water.
  23. Mix well and pressure cook for 2 whistles.
  24. Allow the steam to escape before opening the lid.
  25. Garnished with coriander.
  26. Serve kathal ki sabzi hot garnished with coriander.

I have tried this recipe and the subzi was very tasty. But I needed little extra oil. Four spoonful was not adequate.
