Lemon rice is a summer dish made with rice and lemon juice mixed with a few spices.

Makes 2 servings
2 cups cooked rice
3 tbsp lemon juice
3 tbsp oil
2 onions , chopped
1 tsp grated ginger (adrak)
1/2 cup coarsely crushed peanuts
2 tsp mustard seeds ( rai / sarson)
2 tsp urad dal (split black lentils)
2 tsp cumin seeds (jeera)
1 tsp fenugreek (methi) seeds
4 to 5 curry leaves (kadi patta)
1 tbsp crushed green chillies
1 tsp coriander (dhania) powder
1/2 tsp turmeric powder (haldi)
salt to taste
chopped coriander (dhania) for garnishing
Method
- Method
- Heat the oil in a pan and add the mustard seeds, cumin seeds, urad dal, fenugreek seeds.
- When the seeds crackle, add the curry leaves and green chilli and groundnut and saute for 15 seconds.
- Add the ginger and onions and saute till they turn golden brown.
- Add the coriander powder and turmeric powder and mix well.
- Add the cooked rice and the remaining ingredients and mix well.
- Serve hot garnished with coriander.
