The makke ki roti is a punjabi traditional roti preparation with makke ka atta or maize flour. The maize flour is rolled, fried and served with or without stuffings. The makke ki roti is typically served with sarson ka saag on a cold winter afternoon.

Makes 5 to 6 rotis
2 cups maize flour (makai ka atta)
1 fistful of plain flour (maida)
1 tbsp oil
salt to taste
ghee for serving and cooking
Method
- Method
- Combine all the ingredients in a bowl, mix well and knead into a soft dough, using enough water.
- Divide the dough into 6 equal portions and roll out each portion into a circle of 6" diameter, using the flour for rolling.
- Heat a tava and cook each roti, using little oil, till golden brown spots appear on both the sides.
- Serve hot ghee and sarson ka saag.
