Masala Bhaat ( Microwave Recipe )

Maharashtrian food can safely be called simple yet intelligent. The ingredients are usually well-chosen, and cooked in a quick yet tasty way with minimal spices. You would even find a lot of single-pot recipes. Here is such a mildly-spiced rice delicacy from the kitchens of that state. It is quite easy to make, but you should ensure that each grain of the cooked rice is separate. Also, do not forget to stir it every 5 minutes for even cooking.

Makes 4 servings
To Be Ground Into A Paste
2 tbsp grated fresh coconut
2 green chillies
12 mm 1/2" piece ginger (adrak)
5 to 6 garlic (lehsun)
Other Ingredients
3/4 cup long grained rice, cleaned and washed
1/8 cup green peas
1/3 cup potatoes, cut into 25 mm. (1”) cubes
1/3 cup brinjals (baingan / eggplant), cut into 25 mm. (1”) cubes
1/3 cup chopped onions
2 tbsp chopped coriander (dhania)
1/4 tsp turmeric powder (haldi)
1 1/2 tsp coriander-cumin seeds powder
1 1/2 tsp chilli powder
3/4 tsp garam masala
1 1/2 tbsp ghee
salt to taste
For The Garnish
1 tbsp chopped coriander (dhania)
- Method
- Combine all the ingredients including the prepared paste with 1 ½ cups of water in a microwave safe bowl and mix well. Cover and microwave on high for 18 minutes, stirring thrice in between, once every 5 minutes.
- Serve immediately garnished with coriander.
