Minestrone Soup

Very healthy and extremely tasty soup which can be a meal by itself. It contains the goodness of variety of vegetables which makes this a nutritious meal. Try it and you will relish it!!!
Minestrone Soup recipe - How to make Minestrone Soup

Makes 4 to 6 servings
2 tsp oil
1 onion , finely chopped
2 to 3 garlic (lehsun) cloves , finely chopped
1 carrot , finely chopped
1 celery (ajmoda) , chopped
1 zucchini , chopped
6 to 8 french beans , chopped
1/2 cup sweet corn kernels (makai ke dane)
1 canned cannellini beans
1 cup cooked macaroni
3 tomatoes , boiled and pureed
salt and pepper to taste
1 tsp dry red chilli flakes (paprika)
1 tsp dried oregano
5 fresh basil leaves
Method
- Method
- Heat the oil in a broad pan, add the onions and garlic and saute on a medium flame for few minutes.
- Add the celery, carrot, french beans, corn and add enough water and bring it to a boil for some time.
- Now add the pureed tomato, white beans, zucchini and the pasta, mix well and cook for 4 to 5 minutes.
- Add the salt, pepper, chili flakes, oregano and fresh basil leaves and mix well and cook for more 2 minutes.
- Serve hot.
