Mixed veg makai paratha is a simple paratha recipe prepared by mixing makai ka atta or maize flour with seasonal winter vegetables. Laden with the goodness of maize flour and chopped vegetables, vegetable makai paratha is a must have as breakfast or main course dish.

Makes 4 parathas
1 radish (mooli) , peeled and grated
1 carrot , peeled and grated
1 cup grated cabbage
1 cup grated cauliflower
1 cup chopped fenugreek (methi)
1 slit green chilli , chopped
1/2 tsp carom seeds (ajwain)
1/4 tsp chilli powder (optional)
salt to taste
500 gms maize flour (makai ka atta)
oil for cooking

- Method
- Combine all the vegetables in a bowl, add the salt, ajwain, red chill powder and 1 tbsp oil and mix well.
- Add the maize flour and knead into a semi-soft doug, using water if required.
- Divide the dough into 4 equal portions and roll them into thick rotis of 5" diameter.
- Heat a tava and cook each paratha using little oil, till golden brown spots appear on both the sides.
- Serve hot with butter.
