Navratan korma is an easy rich creamy vegetable gravy recipe with an array of mixed vegetables cooked in a delicious onion tomato mix. The veggies are stir fried ina spicy kurma and served with roti or paranthas.

Ingredients

1/4 cup fresh curds (dahi)
1/4 cup fresh cream or cream
1/4 cup grated processed cheese
2 tbsp grated paneer (cottage cheese)
2 tbsp butter
1/2 tsp plain flour (maida)
2 tbsp tomato puree
2 cups boiled green peas
1 carrot , chopped
1/4 cup freshly grated coconut
2 to 3 green chillies , chopped
1 small apple , chopped
1 small sweet lime (mosambi) segments
1 banana , chopped
2 slices of canned pineapple , drained
8 to 10 cashewnuts (kaju)
15 to 20 raisins (kismis)
2 to 3 cherries for garnishing

To Be Blended Into A Dry Powder
1/2 tsp cumin seeds (jeera)
1 tsp poppy seeds (khus-khus)
2 cardamoms
salt to taste
sugar to taste

    Method
  1. Combine the coconut, green chillies and paneer and blend in a mixer to a smooth paste. Keep aside.
  2. Heat the butter in a pan, add the ground paste and dry masala, tomato puree saute for 2-3 minutes.
  3. Add the carrots, peas, curds, flour and saute on a high flame for 3 minutes.
  4. Add all the fruits, cream, cashews, raisins, salt and sugar, mix well and remove from the flame.
  5. Garnish with cherries and cheese before serving.
  6. Serve hot with naans, or stuffed kulchas.
