Navratan korma is an easy rich creamy vegetable gravy recipe with an array of mixed vegetables cooked in a delicious onion tomato mix. The veggies are stir fried ina spicy kurma and served with roti or paranthas.

Makes 6 servings
1/4 cup fresh curds (dahi)
1/4 cup fresh cream or cream
1/4 cup grated processed cheese
2 tbsp grated paneer (cottage cheese)
2 tbsp butter
1/2 tsp plain flour (maida)
2 tbsp tomato puree
2 cups boiled green peas
1 carrot , chopped
1/4 cup freshly grated coconut
2 to 3 green chillies , chopped
1 small apple , chopped
1 small sweet lime (mosambi) segments
1 banana , chopped
2 slices of canned pineapple , drained
8 to 10 cashewnuts (kaju)
15 to 20 raisins (kismis)
2 to 3 cherries for garnishing
To Be Blended Into A Dry Powder
1/2 tsp cumin seeds (jeera)
1 tsp poppy seeds (khus-khus)
2 cardamoms
salt to taste
sugar to taste

- Method
- Combine the coconut, green chillies and paneer and blend in a mixer to a smooth paste. Keep aside.
- Heat the butter in a pan, add the ground paste and dry masala, tomato puree saute for 2-3 minutes.
- Add the carrots, peas, curds, flour and saute on a high flame for 3 minutes.
- Add all the fruits, cream, cashews, raisins, salt and sugar, mix well and remove from the flame.
- Garnish with cherries and cheese before serving.
- Serve hot with naans, or stuffed kulchas.
