Baked Jacket Potatoes with Baked Beans and Cheese

Potatoes cooked with their jacket on have a special rustic flavour that everybody loves. It is quite different from the bland taste of potatoes cooked without the skin.
There are many ways of preparing jacket potatoes and this is one of the most delectable options! Here, parboiled potatoes are seasoned with pepper and stuffed with a yummy filling of baked beans and veggies, and then baked with a cheesy garnish.
As the cheese melts and coats the stuffed jacket potatoes you get a golden coloured treat that is as treasurable as gold.

Makes 8 servings
4 par-boiled potatoes
salt and for sprinkling
To Be Mixed Into A Bean Filling
5 tbsp baked beans
1 tbsp finely chopped onions
1 tbsp chopped tomatoes
1 tsp finely chopped green chillies
1 tbsp finely chopped capsicum
salt to taste
Other Ingredients
4 tsp grated processed cheese
1 tsp dry red chilli flakes (paprika) for sprinkling
- Method
- Divide the bean filling into 8 equal portions. Keep aside.
- Cut each parboiled potato into 2 halves vertically with help of a sharp knife.
- Scoop the potato halves, using a spoon so that a depression is created for the filling.
- Sprinkle some salt and pepper powder over each potato halve and stuff each of them with a portion of the prepared beans filling.
- Sprinkle with ½ tsp of grated cheese and little chilli flakes on each potato halve and arrange on a baking tray.
- Bake in a pre-heated oven at 200°c (400°f) for 10 minutes.
- Serve immediately.

- In a microwave safe bowl, wash and prick the potatoes with the fork and microwave on high for 5 minutes. Cool completely.
- You can also put potatoes in hot boiling water and cook till they are 80% done. Keep aside.
- For the baked bean filling, take a deep bowl and add store-bought baked beans to it. They are saucy and tangy. Do not buy if the can is puffed or expired.
- To make them exciting, we will be adding chopped onions. They even provide a nice crunch.
- Now add chopped tomatoes.
- Finally, some chopped green chillies.
- And then add chopped capsicum and salt to taste. Mix well. You can even add red bell pepper and broccoli to make baked potatoes with broccoli and red pepper.

- Do not peel the skin. Cut each parboiled potato into 2 halves vertically with help of a sharp knife.
- Scoop the potato halves, using a spoon so that a depression is created for the filling.
- Sprinkle some salt and pepper powder over each potato halve.
- Stuff each of them with a portion of the prepared beans filling.
- Sprinkle ½ tsp of grated cheese. You can also use mozzarella cheese.
- Add little chilli flakes on each potato halve. They spice up the potatoes.
- Arrange the potatoes on a baking tray.
- Bake in a pre-heated oven at 200°C (400°F) for 10 minutes.
- Serve immediately as an evening snack or as an appetizer with Italian meals.
