Nutritious Noodles

Don't prevent your kids from eating their favourite foods; inject good health into them instead by adding the right ingredients. For example, use rice noodles instead of refined flour (Maida) noodles and add healthy ingredients like veggies, sprouts, peanuts etc. By concocting healthier versions of their favourite dishes, your kids can have their way, and so can you!
Nutritious Noodles recipe - How to make Nutritious Noodles

Makes 4 servings
200 gms rice noodles (dried rice vermicelli)
1 tbsp oil
2 tsp garlic (lehsun) paste
1 small sized whole dry kashmiri red chilli
1/4 cup chopped spring onions (with greens)
1/4 cup chopped french beans, blanched
1/4 cup chopped carrots, blanched
1/4 cup sliced mushrooms (khumbh) , optional
1 stalk of celery, finely chopped
3/4 cup bean sprouts
1/4 cup peanuts, roasted and chopped
2 tsp soy sauce
1 tsp sugar
1 tbsp lemon juice
salt and freshly ground black pepper (kalimirch) powder to taste
Method
- Main Procedure
- Place the noodles in a large bowl.
- Boil 1 litre of water with a little salt in a broad pan and pour it over the raw rice noodles. Cover and keep aside for 10 minutes or till the noodles are soft. Drain and keep aside.
- Heat the oil in a non-stick pan, add the garlic paste, red chilli, spring onions, French beans, carrots, mushrooms and celery and sauté for 2 to 3 minutes.
- Add the noodles, bean sprouts, peanuts, soya sauce, sugar, lemon juice, salt and pepper and toss well. Sprinkle 1 tablespoon of water if required to moisten the noodles.
- Serve immediately.

the noodles turned out to be the highlight of the evening as all the guests loved them. The quantity was a bit short and also I left out the mushrooms as I wasn't very fond of them. But in totality it turned out to be a very tasty and healthy dish which could be had at any point in the day .
