To make onion cheese paratha, combine cooked onion, grated cheese, wheat flour, pepper powder, oil, ghee and salt in a bowl and knead into a soft dough. Divide the dough into 8 equal portions and roll each portion into a 100 mm. (4”) diameter circle using a little whole wheat flour for rolling. Heat a non-stick tava (griddle) and cook each paratha on a medium flame, using little oil, till it turns golden brown in colour from both the sides.
Parathas are served for breakfast with curds and a pickle are the staple food for most North Indians. These onion cheese paratha taste best when they are served as soon as they are prepared.

For Onion , Cheese and Pepper Parathas
1/2 cup finely chopped onions
1/2 cup grated processed cheese
1 1/2 tsp freshly ground black pepper (kalimirch) powder powder
1 1/2 cups whole wheat flour (gehun ka atta)
1 tsp oil
1 tbsp ghee
salt to taste

- Method
- Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 2 minutes. Keep aside to cool.
- Combine all the ingredients including the onions in a deep bowl and knead into a soft dough using enough water.
- Divide the dough into 8 equal portions and roll each portion into a 100 mm. (4”) diameter circle using a little whole wheat flour for rolling.
- Heat a non-stick tava (griddle) and cook each paratha on a medium flame, using little oil, till it turns golden brown in colour from both the sides.
- Serve immediately with fresh curds.

I made this paratha for lunch, as I had invited my friends over and had made my special paneer and chatpati bhindi subzi... i thought how boring would it be to serve it with phulkas so i decided to make these parathas... and guess what they loved it... these parathas complicated my meal so well... i look fwd to make them again... SOON...
