Ingredients


For Pahadi Paneer Tikka
2 cups paneer (cottage cheese) cubes , cut into 25 mm cubes
1 cup onion cubes , cut into 25 mm cubes
1 cup capsicum cubes , cut into 25 mm cubes
1 cup tomato cubes , cut into 25 mm cubes
4 tsp oil for cooking
salt to taste

To Be Ground To A Smooth Green Marinade
1 cup chopped mint leaves (phudina)
1/2 cup chopped coriander (dhania)
1 tsp cumin seeds (jeera)
1 tbsp chopped green chillies
1 tsp lemon juice
1 tbsp fresh cream
2 tbsp hung curds (chakka dahi)
salt to taste

Method
For the green marinade

  1. To make the green marinade for {span class="bold1"}pahadi paneer tikka{/span}, combine the mint leaves, coriander leaves, cumin seeds, green chillies, lemon juice, hung curds, fresh cream and salt in a mixer bowl and blend to a smooth paste. Keep aside.

  2. Add paneer cubes, onion cubes, capsicum cubes and tomato cubes.
  3. Gently mix using a spatula to coat them well in the marinade. Keep aside to marinate for atleast 30 minutes.
  4. Arrange the onion, tomato, capsicum and paneer on a wooden skewer.
  5. Repeat step 4 to make 4 more skewers.
  6. Heat a non-stick tava (griddle) and grease well using 2 tsp of oil.
  7. Place 2 to 3 skewers on it at a time.
  8. Cook them on medium flame for 4 to 5 minutes while turning around to get the charred marks evenly.
  9. Repeat steps 7 and 8 to cook the remaining skewers.
