Panchmel Khichdi ( Microwave Recipe )

We are lucky to be living in a land of such diverse and dynamic cultures, and we should exercise that good fortune by frequently trying our hand at cuisines from across the country. As mentioned earlier, gujarat is the hub of vegetarianism, and this is one of their favourites. Panchamel refers to a practical yet delectable combination of rice with four types of dal. Although it might take some time to wash and chop the veggies, the actual cooking time is not much, thanks to the microwave. Serve hot with ghee, pickles, papad and curds. Close your eyes at the first mouthful and foray to the heart of gujarat.

Makes 4 servings
3/4 cup long grained rice (basmati)
2 tbsp ghee
1 tsp cumin seeds (jeera)
2 tsp finely chopped garlic (lehsun)
2 tsp grated ginger (adrak)
1/4 cup onion cubes
1/2 cup cabbage , cut into big pieces
3/4 cup cauliflower florets
1/2 cup potatoes , peeled and chopped
1/2 cup green peas
1 1/2 tsp chilli powder
1/4 tsp turmeric powder (haldi)
2 1/2 tsp coriander (dhania) powder
1/2 cup chopped tomatoes
1/2 tbsp masoor dal (split red lentil)
1/2 tbsp chana dal (split bengal gram)
1/2 tbsp yellow moong dal (split yellow gram)
1/2 tbsp toovar (arhar) dal
salt to taste
- Method
- Clean, wash and soak the rice and dals for 1 hour. Drain and keep aside.
- Put the ghee in a microwave safe bowl and microwave on high for 1 minute.
- Add the cumin seeds, garlic, ginger and onions and microwave on high for 2 minutes.
- Add the cabbage, cauliflower, potatoes, green peas, chilli powder, turmeric powder, coriander powder, tomatoes, rice, all the dals, salt and 3½ cups of water, mix well and microwave on high for 20 minutes, stirring four times in between after every 5 minutes.
- Serve immediately.
