Penne Salad in Basil Dressing

The Penne Salad in Basil Dressing is a true tongue-tickler. Tangy sun-dried tomatoes and crunchy walnuts decorate cooked penne along with a flavourful dressing of fresh basil, mixed herbs and red chilli flakes. Olive oil not only binds the dressing together, it also imparts an aesthetic flavour and aroma to it. Serve this penne preparation immediately before it gets watery, to enjoy it to the hilt.

Makes 2 servings
1 cup cooked penne
2 tbsp chopped walnuts (akhrot)
5 sun-dried tomatoes
To Be Mixed Into A Basil Dressing
2 tbsp chopped fresh basil leaves
2 tsp finely chopped garlic (lehsun)
2 tbsp olive oil
1/2 tsp dry red chilli flakes (paprika)
1/2 tsp mixed herbs
salt to taste
- Method
- Soak the sun-dried tomatoes in a bowl, in enough hot water for 20 minutes. Drain and finely chop them.
- Combine all the ingredients in a deep bowl and toss well.
- Serve immediately.

I made this pasta salad yesterday and it was delicious. Crunchy from walnuts, chewy from the penne pasta, and lovely taste and aroma from the garlic and my favourite Basil. Yummm.. This recipe is definitely going to make a come back very very soon in my kitchen and be made often. The only tip to make it more healthy and nutritious is to use 100% whole wheat penne pasta. But all in all, this recipe gets an A+ from me.
