For a stronger mint flavour, add a drop of peppermint essence to the chocolate cupcake batter before baking.

6 chocolate sponge

6 tbsp butter ( at room temperature)
12 tbsp icing sugar
6 tsp cocoa powder
1 tsp vanilla essence
1 tsp peppermint essence

- Put the butter in a deep bowl and beat it using a spatula.
- Add the icing sugar, cocoa powder, vanilla essence and peppermint essence and mix well. Keep aside.
