Makes 2 servings
2 cups (200 ml) vanilla ice cream
1 cup crumbled ginger (adrak) biscuits
1 tbsp ginger (adrak) juliennes
2 cups chopped pineapple
1 to 2 tbsp sugar
Method
- Main procedure
- In a pan combine the pineapple, ginger and sugar with ¼ cup water and bring to a boil. Simmer for a few minutes till the pineapple has softened a little. Cool completely and then chill.
- When you wish to serve, assemble 2 glasses - beginning with the cooked pineapple and ginger mixture and the layers of the crumbled ginger biscuits and ice-cream.
- Serve immediately garnished
