Rolling these train cutlet in bread crumbs before deep-frying imparts a wonderfully crunch mouth-feel, which you are sure to enjoy whether you have this snack as it is with tomato ketchup, or sandwiched inside bread and butter. I have deep-fried these railway patties snack to get the best results. You may also pan-fry or even shallow fry the cutlet for a better health option.

Tips to make railway patties: 1. You can also add finely chopped cabbage to make these patties. 2. You can store these patties in an air tight container in the freezer for 1 week and deep fry as required. 3. Instead of chilli powder you can use chilli flakes.

Railway Patties recipe - How to make Railway Patties

Ingredients


For Patties Mixture
1 tbsp oil
1 tsp ginger (adrak) paste
1 1/2 tsp finely chopped green chillies
1/2 cup chopped carrot
1/4 cup chopped beetroot
1/3 cup finely chopped french beans
1/4 cup boiled green peas
3 cups boiled and mashed potatoes
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1 tsp chaat masala
1/4 cup bread crumbs
2 tbsp finely chopped coriander (dhania)
salt and to taste
bread crumbs for rolling
oil for deep frying

To Be Mixed Into Slurry
1/4 cup plain flour (maida)
1/4 cup cornflour
salt to taste
1/2 cup water

For Serving
tomato ketchup

Method
For railway patties

    For railway patties
  1. To make {span class="bold1"}railway patties{/span}, heat the oil in a deep non-stick, add ginger garlic paste and green chillies and sauté for few seconds.
  2. Add carrots, beetroot, french beans and green peas and cook on high flame for a minute.
  3. Remove from the flame, transfer the mixture to a plate and allow it to cool completely.
  4. Add mashed potatoes, turmeric powder, chilli powder, chaat masala, salt, black pepper powder, breadcrumbs and coriander. Mix well to form a patties mixture.
  5. Divide and roll the mixture into 14 equal portions and shape each portion into a 75 mm. (3”) flat oval.
  6. Dip each patties in the prepared slurry and roll in the bread crumbs till they are evenly coated from all the sides.
  7. Heat the oil in a kadhai and deep-fry each patties till it turns golden brown in colour from both the sides. Drain on absorbent paper.
  8. Serve {span class="bold1"}railway patties{/span} immediately with tomato ketchup.

vegetable patties.. combination of all uncooked veggies.. and cooked together in their own juices.. generally i cook with boiled and blanched vegetables.. with does not give me that perfect taste.. but this recipe.. has created the magic in y house.. every body just loves this patties.. i turned this into a burger patty.. with some cheese.. and it is big hit in my house.
