carrot recipe collectionCarrot, or gajar, is one of the most versatile root vegetables you can find. It is mildly sweet in taste and found in different colors like orange, purple and yellow, but the most commonly found is the orange one. One is surprised as to how many different types of things can be made with carrots, ranging from sweets to juices, subzis and soups and much more. Below is a gist of a few of my favorite carrot recipes in every variation, hope you like it!

Carrot Recipes for Snacks

A super soft pancake, with rice flour, coconut and the brightness of carrots makes the perfect Carrot Dosas either for an evening snack or breakfast. Finger food is preferred around the world for snacks as well and there many that can be made with carrots like the creamy Carrot and Cheese Toast and the mind blowing Baked Carrot and Spring Onion Open Toast, which is an amazing medley of flavors together.

Something innovative that is cooked with carrot is Whole Wheat and Carrot Beetroot Savory Muffins. Don’t be confused by the word 'muffin', these are not sweet but instead are perked up with savory spices and make the perfect snack on the go. But if you're looking for something simple, look no further than Stuffed Cabbage Carrot and Cheese rolls, made with leftover rotis and simple veggies.

Healthy Carrot Recipes

There are so many varieties of healthy food that can be had in different ways, whether as juice or snack. Carrot, being rich in Vitamin A, is really important for us to incorporate in our diet. A few ways in which you can do that is first to make a juice like Carrot Beet and Apple Juice, a complete energy boosting drink. Another way to eat it is as a salad, a Cabbage, Carrot and Lettuce Salad. An offbeat healthy recipe would be Mini Carrot and Cabbage Buckwheat Pancake, which not only gives you the goodness of carrots but also of buckwheat.

Carrot Recipes for Soup

Due to the bright orange color and the mild sweetness, carrot soups become appealing to the eye and to the palate. There are a lot of options to pick from like the simple, yet wholesome Cream of Carrot soup to the more complex and rich Carrot and Moong Dal Soup. Carrot is a lovely ingredient that mixes well with a lot of other ingredients to produce impeccable dishes. One of such examples is Rice and Carrot Soup which is a unique combination of a cooked rice and sautéed carrots combined together and had as a meal.

Indian Carrot Recipes

The most basic way that uses carrot in Indian cuisine is by making Carrot Paratha. By simply adding grated vegetables to the atta, you can create so many types of parathas, carrot paratha being one of them. Another way to do it is to stuff the dough to get thick, scrumptious parathas like the Green pea and Carrot Paratha. A lot of Indians make bhakri as well, which is a thick pancake make of rice flour. This simple recipe can be jazzed up with vegetables, for example the Cabbage and Carrot Rice Bhakri, and be given a lovely twist.

Carrots are added to subzis to give them a hint of sweetness. In the Carrot and Methi subzi, carrots perfectly balance the bitterness of the methi with its sweetness. It works well in Broccoli, carrot and Paneer subzi too as all three have different textures and flavors that complement each other very well. Carrots are also added to rice dishes like pulao, and Carrot and Cucumber Curd Rice to enhance the overall taste.

Dessert Carrot Recipes

Who can mention carrot desserts without first taking the name of Gajar Halwa!! This is the most delectable Indian sweet out there, everyone's favorite. Here the grated carrots are cooked in milk, ghee and sugar to make to most creamy halwa. Carrots also make a great addition to a kheer like dessert called Carrot and Cashew Payassam. Being sweet in taste, simple desserts like Chocolate, Carrot Brownies can also be made with carrots which also provide some earthiness to the taste.

It is indeed very tasty and filling, and an apt accompaniment for any meal. When you are in the mood to do something different, you can even have this dal as a mid-day snack or breakfast, because it is so sumptuous! A traditional tempering of seeds and curry leaves adds more josh to this wholesome combo of veggies and dal, making it a truly delectable dish. Fresh out of the garden, that is how this dip feels! The Radish, Cucumber and Curd Dip comprises refreshing salad veggies with curd and fresh cream for richness and green chillies for flavour. Chill and serve this dip with freshly-sliced crunchy veggies.
A brightly coloured salad.
An aromatic stir-fried vegetables flavoured with lemon grass.
This recipe goes to prove that healthy food can also be fun and interesting! Veggies are stuffed in small lettuce squares that are rolled up to make wraps. While that is tempting in itself, the use of ginger and garlic further enhances the flavour of this vegetable-loaded dish, while tofu and bean sprouts are health boosters. Soya sauce is a processed food that is high in sodium and preservatives; hence I have used just 1 tsp to flavour the filling. Red chilli flakes spice up the flavour – but you can modify the quantity used as per your liking. So, here we go, another low calorie snack that can be had without any guilt or fear of an increasing waistline!
The Hot and Sour Noodle and Vegetable Salad features a splash of colours and a riot of flavours, in every sense! A crispy chinese sizzler combining delicious wontons with popular sweet and sour vegetables.
This sizzler is laden with a bounty of flavours and spices. A delicately flavoured rice noodle preparation is topped with a smoky, curry flavoured satay, grilled and served with a spicy-sweet peanut sauce and crispy potatoes.
The all-time favourite hot and sour soup makes a stunning comeback, in an even healthier form! The beauty of this soup is not just in the method of making it but also in the way it is served. The flavours of lemon grass and coriander should be extracted well by boiling them; lemon grass is very specific to thai cooking and imparts its refreshing flavour to the dish. Pouring hot soup over the spring onions, carrots and coriander helps release their flavours besides cooking them slightly. Keep in mind that seasoning cubes already contain salt. Therefore, extra salt should be added finally, and only if required.
The true highlight of this dish is the paste that is made using red chillies, onions and other well-chosen ingredients. You can make it fresh for a better taste; or to save time, you can make it in bulk and deep-freeze to use as and when required. Healthy ingredients like tofu, mushroom and other veggies enhance this recipe’s health quotient while a basket of creatively-combined ingredients make it a delight for the taste-buds. If you do not like tofu, you can replace it with low fat paneer. Thai cooking is incomplete without coconut milk but as a matter of fact it is high in fat; I have therefore restricted its use to ½ cup as compared to the original recipe that calls for almost 3 times more. Another key ingredient in Thai cooking is lemon grass, which can be used liberally without any fear of calories… this is the secret behind the refreshing touch of most Thai recipes.
Noodles with tomato and cheese sauce is a typical party serving, wherein cooked pasta is served with a choice of two sauces, one tangy and one creamy. Guests are offered a choice of picking between the sauces, as per their taste. While both sauces and the pasta are easy to prepare, i suggest spending a little time on a nice, attractive serving style.
Bananas in fruit salad are expectable, but this is a total surprise! A mind-boggling combination of banana, cucumber and boiled noodles along with lettuce and carrots transforms into a very exciting salad when topped with salad cream and crunchy walnuts.
