Roti Nu Shaak, Roti ki Sabzi

Everybody loves to have rotis with subzi, but have you ever thought of making a subzi out of rotis? Well, here is an innovative recipe that involves cooking a mixture of rotis and curds with spice powders and tomatoes.
The outcome is a tangy subzi that is simply awesome. The Roti nu Shaak is easy and quick to cook in the Microwave oven, and is a smart way to make use of leftover chapatis.

Makes 2 servings
3 leftover chapatis , torn into small pieces
2 tbsp curds (dahi)
1/4 tsp turmeric powder (haldi)
salt to taste
2 tsp oil
1/2 tsp mustard seeds ( rai / sarson)
1/2 tsp cumin seeds (jeera)
1 tsp chopped green chillies
1/2 tsp chole masala
1/4 cup chopped tomatoes
For The Garnish
2 tsp chopped coriander (dhania)

- Method
- Combine the chapati, curds, turmeric powder, salt and ¾ cup water in a deep bowl, mix well and keep aside for 10 minutes.
- Combine the oil, mustard seeds, cumin seeds and green chillies in a microwave-safe bowl and microwave on high for 1 minute.
- Add the chapati-curds mixture, chole masala and tomatoes, mix well and microwave on high for 2 minutes.
- Serve immediately garnished with coriander.
