To make shakarkand ka halwa, combine the saffron and warm milk in a small bowl, mix well and keep aside. Heat the ghee in a deep non-stick pan, add the sweet potatoes and sauté on a medium flame for 2 to 3 minutes. Add the milk, ½ cup of water, sugar and cardamom powder and mix well. Cook on a slow flam for 2 to 3 minutes or till the mixture has little liquid remaining and not completely dry, while stirring continuously.   1. What is shakarkand ka halwa made off? shakarkand ka halwa is made from 2 cups boiled , peeled and mashed sweet potatoes, a few saffron (kesar) strands , 1 tbsp warm milk, 1 tsp ghee, 3/4 cup milk, 1/2 cup sugar, 1/4 tsp cardamom (elaichi) powder and 2 tbsp chopped mixed nuts.

What are sweet potatoes?

  1. This is what sweet potatoes look like. Plenty of dirt on them. 
  2. Wash under running water.
  3. Put in a pressure cooker with ample of water in it.
  4. Pressure cook for 4 whistles.
  5. Cool and open the lid.
  6. Peel the boiled sweet potatoes.
  7. Mash the peeled and boiled potatoes. We now have boiled, peeled and mashed sweet potatoes.

  3. Mix well.
  4. Keep aside the saffron milk mixture. Soak the saffron in warm milk for at least 20 minutes as it adds colour and enhances the aroma.
