Spiced Baby Corn and Broccoli

Baby corn and broccoli cooked in a fragrant spice mix makes a delectable starter. You may even serve this as a vegetable with steamed rice to make a satiating meal.

Makes 2 servings
1 cup baby corn cubes
1 cup broccoli florets
2 tbsp chopped onions
1/2 tsp chopped garlic (lehsun)
1/4 cup chopped tomatoes
1 tbsp plain flour (maida)
1/2 cup milk
1 tsp butter
salt to taste
To Be Mixed Into A Spice Powder
1 tsp dried mixed herbs
1/4 tsp freshly ground black pepper (kalimirch)
1 tsp dry red chilli flakes (paprika)
Method
- Method
- In a microwave safe bowl, combine the baby corn and broccoli along with 2 tablespoons of water and microwave on high for 1 minute. Keep aside.
- In another microwave safe bowl add the butter, onions and garlic, mix well and microwave on high for 1 minute.
- Add the tomatoes, plain flour and the spice powder, mix well and microwave on high for 1 minute.
- Add the milk, baby corn, broccoli and salt, mix well and microwave on high for 3 minutes, while stirring twice in between.
- Serve immediately.
