Spicy Corn Palak

From pizzas and pastas to pulaos and subzis, corn and spinach are an ever successful duo as they complement each other very well in flavour, texture and appearance. In this delectable Spicy Corn Palak recipe, they are combined with onions, tomato puree and other spice enhancers to make a truly mouth-watering subzi. The addition of milk and fresh cream gives this subzi a luxurious texture and creamy flavour, while a sprinkling of chole masala gives it an intense flavour. Since it takes only minutes to prepare this treat using the microwave oven, you can make it just before sitting down to dinner so you can enjoy the fresh flavours of palak and corn.

Makes 2 servings
1/4 cup boiled sweet corn kernels (makai ke dane)
3/4 cup chopped and blanched spinach (palak)
3 tbsp milk
1 tbsp cornflour
2 tsp oil
1/4 cup chopped onions
1/2 tsp chopped green chillies
1/4 tsp chopped garlic (lehsun)
1/4 tsp chopped ginger (adrak)
1 tbsp tomato puree
1/4 tsp chilli powder
1/2 tsp chole masala
1 tbsp fresh cream
salt to taste
- Method
- Combine the milk and cornflour in a bowl and mix well. Keep aside.
- Combine the oil, onions, green chillies, garlic and ginger in a microwave-proof bowl, mix well and microwave on high for 2 minutes.
- Add the tomato purée, chilli powder, chole masala, cornflour-milk mixture, salt, spinach and corn, mix well and microwave on high for 2 minutes.
- Serve hot.
