For The Filling
2 tsp olive oil
3/4 cup finely chopped onions
2 tsp finely chopped green chillies
2 cups grated carrot
3/4 cup shredded cabbage
1/2 cup boiled peeled and grated potatoes
2 tbsp chopped coriander (dhania)
salt to taste
For The Tahini
3/4 cup sesame seeds (til)
1 tbsp vinegar
4 tbsp fresh curd (dahi)
2 tsp chopped garlic (lehsun)
1 tsp olive oil
1 tsp chilli powder
1 tsp cumin seeds (jeera) powder
salt to taste
Other Ingredients
8 spinach rotis
8 tsp garlic chutney
2 cups shredded lettuce
For the filling

- Heat the oil in a deep non-stick pan, add the onions and sauté till they turn translucent.
- Add the green chillies, carrots, cabbage, potatoes, coriander and salt, mix well and sauté on a medium flame for 2 more minutes.
- Divide into 8 equal portions. Keep aside.

- Heat a non-stick pan and dry roast the sesame seeds on a slow flame for 1 to 2 minutes or till fragrant. Keep aside to cool completely.

- Add vinegar, curd, garlic, olive oil, chilli powder, cumin seeds powder, 5 tbsp water and salt and blend till nice and creamy.
