A stir-fried version of the famed Risotto, this creamy rice dish with zucchini, red, yellow and green capsicum makes it particularly enjoyable.
Stir-Fry Italian Rice recipe - How to make Stir-Fry Italian Rice

Makes 4 servings
3 tbsp olive oil or oil
1/2 cup finely chopped onions
1 tsp finely chopped garlic (lehsun)
2 tbsp finely chopped celery
1/4 cup finely chopped zucchini
1/2 cup finely chopped red, yellow and green capsicum
3 cups Steamed Rice
1/2 cup fresh cream
1/2 cup milk
1/4 cup grated parmesan cheese or cheese
salt and freshly ground black pepper (kalimirch) powder to taste
Method
- Main Procedure
- Heat the oil in a wok, add the onions and stir-fry for a couple of minutes.
- Add the garlic and celery and stir-fry for another minute.
- Add the zucchini and capsicum and stir-fry for a couple of more minutes.
- Add the rice, cream, milk, cheese and salt and cook for 3 to 4 minutes.
- Add the pepper and mix well.
- Serve immediately.
