Strawberry Kheer

Here is a dessert that combines the fruity punch of strawberries with the rich desi flavour of kheer. Strawberries in chopped and pureed forms give this intensely milky kheer a double boost, while the mild use of spices gives it a very aesthetic flavour. You are sure to relish the unique and thoroughly enjoyable flavour and texture of this Strawberry Kheer. Serve it chilled.
Strawberry Kheer recipe - How to make Strawberry Kheer

Makes 4 servings
1/2 cup chopped strawberries
1/2 cup strawberries purée
2 tsp cornflour
1 tbsp cold milk
3 cups full-fat milk
1/2 cup sugar
a pinch of cardamom (elaichi) powder
Method
- Method
- Combine the cornflour and cold milk in a bowl, mix well and keep aside.
- Boil the milk in a deep pan on a high flame, which will take approx. 5 to 6 minutes while stirring twice in between.
- Lower the flame and cook for 5 to 6 minutes, while stirring continuously.
- Add the cornflour-milk mixture and sugar, mix well and cook on a slow flame for 7 to 8 minutes, while stirring continuously and scrapped the side of the pan.
- Add the cardamom powder, mix very well and cook on a medium flame for a few seconds.
- Switch off the flame, allow the mixture to cool completely.
- Add the strawberry purée and strawberries, mix well.
- Refrigerate for atleast ½ hour and serve chilled.

I am big fan of Tarla Dalalji, I always try her recipes, and they all come out well. But with this recipe, my milk got curdled after adding the puree and chopped strawberries. I think you need to change or add the step to allow the milk to come back to room temperature and then add puree and chopped strawberries. Also the video shows to add the puree and chopped strawberries immediately after switching off the flame. Pls check.Also would appreciate if you can add the tips ,like if something goes wrong or some mistake takes place ...how can one adjust to rectify that dish . Like in my case , if the milk gets curdled...what to do or how can one rectify. Thanks

When we think of kheer one always thinks about rice Kheer but this Strawberry Kheer is not only unusual but great in taste to, what I love the best about this recipe is the chopped pieces of strawberries that give a very nice mouthfeel. I serve this chilled which is very important.
A very healthy dessert without the use of any high carbohydrate or high cal ingredients. Worth a try!!
