Subzi Ka Korma

Subzi ka korma is a mildly-flavoured dry preparation of mixed vegetables. While you can go with any vegetables for this, i have chosen common vegetables so that the korma can comfortably accompany even rich rotis or puris.

Makes 4 servings
1 1/4 cups chopped and boiled mixed vegetables (french beans , carrots , green peas and cauliflower)
1 tbsp oil
1/2 cup finely chopped onions
1/2 cup boiled and peeled potato cubes
2 tbsp finely chopped coriander (dhania)
1/2 tsp garam masala
1 tsp lemon juice
salt to taste
To Be Ground Into A Smooth Paste (using Little Water)
1/2 cup roughly chopped onions
4 green chillies , roughly chopped
25 mm (1") piece ginger (adrak)

- Method
- Heat the oil in a kadhai, add the onions and sauté on a medium flame for 2 minutes.
- Add the prepared paste and sauté on a medium flame for another minute.
- Add all the remaining ingredients, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Serve hot.

100% classic home style recipe... however what appeals me the most about this dish is the minimal use of spices/masalas... as it is rightly said simple is always good...
Cauliflower, green peas, French beans, carrots and potatoes cooked in garam masala making a nice dry vegetable.
