Makes 10 toasts
10 toasted whole wheat bread slices
For The Sun Dried Tomato , Paneer and Basil Spread
1/4 cup sun-dried tomatoes
1 cup low-fat paneer (cottage cheese) cubes
1/2 cup roughly chopped basil
1 tsp finely chopped green chillies
salt to taste
For The Garnish
1/4 cup finely chopped black olives

- Soak the sun-dried tomatoes in enough hot water for 30 minutes. Drain well and roughly chop them.
- Combine all the ingredients, including the sun dried tomatoes, and blend in a mixer into a smooth paste.

- Place the toasted bread slices on a clean dry surface and apply 2 tbsp of the sun-dried tomatoes , paneer and basil spread on each toasted bread slice.
- Serve immediately garnished with black olives.
