Zucchini and yellow pepper sautéed with a combination of spices and herbs forms a great topping for French bread coated with Mayo spread comprising mayonnaise, parsley and chilli sauce.

Makes 8 toasts
For The Bread Slices
8 slices baguette
melted butter for greasing and brushing
For The Zucchini and Yellow Pepper Toast Topping
1/2 cup thinly sliced zucchini
1/2 cup thinly sliced yellow capsicum
2 tsp olive oil
1 tsp finely chopped garlic (lehsun)
1/2 tsp dry red chilli flakes (paprika)
1/2 tsp dried oregano
salt to taste
To Be Mixed Into A Mayo Spread
1/4 cup mayonnaise
1 tbsp finely chopped parsley
a pinch of salt
1 tbsp red chilli sauce

- Arrange the bread slices on a greased baking tray. Brush all the bread slices with melted butter and bake in a pre-heated oven at 200°c (400°f) for 5 minutes or till they are crisp. Keep aside.

- Heat the olive oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
- Add the zucchini and capsicum and sauté on a medium flame for 2 minutes.
- Add the chilli flakes, oregano and salt, mix well and cook on a medium flame for 1 minute.
- Divide the topping into 8 equal portions and keep aside.

- To make zucchini and yellow pepper toast, divide the mayo spread into 8 equal portions.
- Place the toasted bread slices on a flat dry surface, apply 1 portion of the mayo spread evenly on each toasted bread slice and spread 1 portion of the topping evenly over it.
- Serve immediately.

For the Topping
- Heat the olive oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds till fragrant.If you don't have olive oil, you can even use sunflower oil or any regular cooking oil.
- Add the zucchini to the pan. This zucchini is not peeled and has been thinly sliced.
- Add the thinly sliced yellow capsicum as well. You can even use the other coloured capsicums.
- Sauté them on a medium flame for 2 minutes till slightly cooked but still crunchy.
- Then add the chilli flakes for a spicy taste.
- Also add oregano and salt, which gives a herby taste to the veggies. Fresh oregano can be used as well. If you are using fresh oregano, use it in double the quantity.
- Mix well and cook on a medium flame for 1 minute, while stirring occasionally.
- Divide the topping into 8 equal portions and keep aside.
For the Mayo Spread
- Put the mayonnaise in a deep bowl. We have used regular eggless mayonnaise but to mix it up you can use garlic mayonnaise as well. Here is the detailed recipe of Easy Homemade Eggless Mayonnaise.
- To it, add the finely chopped parsley leaves. In case you do not have parsley, you can replace it with coriander.
- Add the chilli sauce and salt, and mix well with a spoon to form a spread. Keep aside. For a sweeter spread, add tomato ketchup instead.
For the Bread Slices
- Grease the baking tray with 1/2 tsp of melted butter. This is to prevent the bread from sticking to the tray.
- Arrange the bread slices on the greased baking tray.
- Brush all the bread slices with melted butter. This will give a superb taste to them when toasted.
- Bake the bread in a pre-heated oven at 200°C (400°F) for 5 to 7 minutes or till they are crisp.
How to Proceed for the Toast
- Spread the mayo equally on all bread slices. Creamy mayonnaise and a crispy toast go great together!
- Then spread 1 portion of the topping evenly over each bread slice.
