Ingredients


1 tbsp groundnut oil or vegetable oil
1 8-ounce can flower-cut baby corn, drained
4 cups 1/2" thick sliced pak choi
1/2 small sized onion, sliced
1/2 cup Vegetable Stock
2 tbsp light or dark soy sauce
1 tbsp black bean sauce or black bean paste
1 tbsp dry sherry
2 tsp red chilli paste
1 tbsp cornflour
1/2 tsp sugar
1/4 tsp schezuan peppers (triphal) , lightly cracked if desired
1 10½-ounce package extra-firm tofu (bean curd/ soya paneer) pressed if desired and cubed
1 12-ounce package Chinese-style egg noodles, cooked
1/4 cup grated carrots
2 tbsp sliced spring onions

Method

  1. Heat in a wok or large skillet over medium-high heat.add ginger and garlic
  2. Stir-fry for 1 minute.
  3. Add baby corn, bokchoy,onion.stir-fry until the bok choy is slightly wilted, 3 to 4 minutes.
  4. Combine and stir in vegetable stock, soy sauce, black bean sauce or black bean paste, dry sherry,chili paste,cornstarch, sugar, szechuan peppercorns, lightly cracked if desired.
  5. Boil, stirring, until thickened, about 1 minute.
  6. Stir in extra-firm tofu, pressed if desired, and cubed.
  7. Heat through for 2 to 3 minutes.
  8. Arrange on a serving platter egg noodles, cooked
  9. Spoon the tofu mixture over the noodles.
  10. Garnish with shredded peeled carrots and sliced scallions
