Szechuan Spiced Tofu recipe - How to make Szechuan Spiced Tofu

1 tbsp groundnut oil or vegetable oil
1 8-ounce can flower-cut baby corn, drained
4 cups 1/2" thick sliced pak choi
1/2 small sized onion, sliced
1/2 cup Vegetable Stock
2 tbsp light or dark soy sauce
1 tbsp black bean sauce or black bean paste
1 tbsp dry sherry
2 tsp red chilli paste
1 tbsp cornflour
1/2 tsp sugar
1/4 tsp schezuan peppers (triphal) , lightly cracked if desired
1 10½-ounce package extra-firm tofu (bean curd/ soya paneer) pressed if desired and cubed
1 12-ounce package Chinese-style egg noodles, cooked
1/4 cup grated carrots
2 tbsp sliced spring onions
Method
- Heat in a wok or large skillet over medium-high heat.add ginger and garlic
- Stir-fry for 1 minute.
- Add baby corn, bokchoy,onion.stir-fry until the bok choy is slightly wilted, 3 to 4 minutes.
- Combine and stir in vegetable stock, soy sauce, black bean sauce or black bean paste, dry sherry,chili paste,cornstarch, sugar, szechuan peppercorns, lightly cracked if desired.
- Boil, stirring, until thickened, about 1 minute.
- Stir in extra-firm tofu, pressed if desired, and cubed.
- Heat through for 2 to 3 minutes.
- Arrange on a serving platter egg noodles, cooked
- Spoon the tofu mixture over the noodles.
- Garnish with shredded peeled carrots and sliced scallions
