A delightful paneer khurchan recipe comes right from a chef's table and can now be recreated at home. The paneer or cottage cheese is crumbled and sauteed with onions, green chillies, tomatoes, pepper and spice. Relish paneer khurchan or bhurjee with chapati.

Makes 4 servings
250 gms chopped paneer (cottage cheese)
1/2 cup finely chopped tomatoes
1/2 tsp cumin seeds (jeera)
1/2 cup finely chopped onion
1/4 tsp turmeric powder (haldi)
1/4 tsp chilli powder
a few drops of lemon juice (optional)
3 tbsp oil
salt to taste
For The Garnish
1 chopped green chillies
2 tbsp chopped coriander (dhania)
Method
- Method
- Heat the oil in a tava and add the cumin seeds.
- When the seeds crackle, add the onions and saute till they turn translucent.
- Add the paneer and tomatoes and cook for 2 minutes.
- Add the turmeric, chilli powder and salt and mix well.
- Transfer in a bowl and garnish with the green chilli and coriander.
- Serve hot.
