Ingredients


3 cups long grained rice (basmati)
6 cloves (laung / lavang)
a medium piece of cinnamon (dalchini)
3 to 4 cardamoms (elaichi)
1 carrot (finely grated)
1 cup orange juice
1 cup chopped onions
1/2 bunch of coriander (dhania) leaves
1 tbsp grated coconut
1 cup grated paneer (cottage cheese)
1 cup ghee
3 to 4 green chillies
2 to 3 cloves of garlic (lehsun)
a small piece of ginger (adrak)
1/2 cup green peas
salt to taste
a few drops of orange colour

Method

  1. divide the rice into 2/3 and 1/3, i.e. 2 cups separately and 1 cup separately.
  2. wash the rice thoroughly and soak in water for 30 mins.
  3. In a pan, add 1 tbsp. ghee, cloves, cinnamon and cardamom.
  4. strain the 2/3 rice and add and fry for 2 mins.
  5. Add double the amount of water, stir, cover and cook till 3/4th done and pick up with fork to separate the grains.
  6. Separate the remaining ghee into 3 parts.

For the white layer :-

  1. Heat one part of a ghee in a pan, add chopped onions and fry till transparent.
  2. add the grated paneer, salt and white pepper and saute for few minutes.
  3. add half of the cooked rice and mix well.

For the green layer :-

    For the green layer :-
  1. grind together coriander leaves, coconut, green chillies, ginger and garlic.
  2. heat the next part of ghee, add jeera and the ground paste and saute for a while.
  3. next add green peas, salt and 1 tbsp. of water, saute and cover and cook till the green peas is cooked.
  4. add remaining part of cooked rice and mix well.

For the orange layer :-

    For the orange layer :-
  1. heat the remaining ghee, add the grated carrot and saute till cooked.
  2. Add the 1/3rd soaked rice and fry for a while.
  3. Add the orange juice, 1 cup water, salt and a few drops of orange colour and cook the rice covered till done.
  4. fork to separate the grains.

To proceed :-

    To proceed :-
  1. take a heavy bottomed pan and grease it with ghee.
  2. first spread the orange rice fully in the bottom of the pan.
  3. Sprinkle some grated cheese.
  4. Next spread the white rice.
  5. Sprinkle some grated cheese over it.
  6. At last add the green rice and cover.
  7. keep the heat on low and cook for another 10 mins.
  8. After a few mins. invert the rice on the serving dish.
  9. Enjoy it with raita and papad.
