here ginger is the main spice as it blends well with fruits and vegetables. Garlic, chilies and spring onions would dominate the mild flavors so they are preferred to be served separately in the form of soups or salads, if required, with this rice.

Tofu Brown Rice recipe - How to make Tofu Brown Rice

Preparation Time:    Cooking Time:    Total Time:    Makes 4 servings

Ingredients

2 cups soaked and cooked brown rice
1/2 cup tofu , cut into small triangles
1/4 cup chopped blanched carrot
1/2 cup boiled kabuli chana (white chick peas)
1/4 cup orange segments
1 cup orange juice
2 tbsp maple syrup
2 tsp soy sauce
1 1/2 tbsp finely chopped ginger (adrak)
1 tbsp sesame (til) oil
2 tbsp finely chopped coriander (dhania)
salt to taste
pepper to taste

To Garnish
2 tbsp chopped spinach (palak)

Method
    Method
  1. Heat the oil in a wok , add ginger and carrots saute for 1 minute.
  2. Add the orange juice, soya sauce and maple syrup and add the spices and mix well.
  3. Simmer for half a minute and add the rice, mix well and let all the juice get soaked up.
  4. Cook while open and serve hot.
  5. While serving stir in orange pieces and coriander.
  6. Top it with palak and serve with orange juice and chilly sauce.
