Makes 5 omelettes
For Tomato Omelette
1/2 cup finely chopped tomatoes
3/4 cup besan (bengal gram flour)
1/4 tsp turmeric powder (haldi)
1/4 tsp garam masala
1/4 tsp asafoetida (hing)
1/2 tsp chilli powder
salt to taste
1/4 cup finely chopped onions
1/2 tsp finely chopped green chillies
1/2 tsp finely chopped ginger (adrak)
1/4 cup chopped coriander (dhania)
5 tsp oil for greasing and cooking
For Serving With Tomato Omelette

- For tomato omelette
- To make {span class="bold1"}tomato omelette{/span}, combine the besan, turmeric, garam masala, asafoetida, chilli powder, salt and ½ cup of water in a deep bowl, mix well using a whisk.
- Add all the remaining ingredients and mix well.
- Heat a non-stick tava (griddle) and grease it with ½ tsp of oil.
- Pour a ladleful of the batter on the tava (griddle) and spread in a circular motion to make a 125 mm. (5”) diameter circle.
- Cook on a medium flame, using ½ tsp of oil, till golden brown spots appear on both the sides.
- Repeat steps 3 to 5 to make 4 more tomato omelettes.
- Serve the {span class="bold1"}tomato omelette{/span} immediately with green chutney and tomato ketchup.

For the Eggless Tomato Omelette Batter
- For making the Tomato Omelette recipe, chop all the vegetables viz. tomatoes, onions, green chillies, ginger, coriander ready. Ensure everything is chopped finely or else you will find trouble in spreading the batter and the tomato cheela might tear.

Mix well using a whisk. You can also make use of a spoon to whisk but a wired whisk is always better.

Add finely chopped Tomato. You can add grated carrots and beetroot too.

Finally, add finely chopped coriander.

Whisk well and our Eggless Tomato Omelette batter is ready. The batter should be of medium consistency. If the batter is too thick then dilute with some water. If it is runny then add some besan and adjust the tomato omelette batter consistency.
How to make Tomato Omelette

For making the Tomato Omelette, Heat a non-stick tava (griddle) and grease it with ½ tsp of oil.

Pour a ladleful of the batter on the tava (griddle).

Spread in a circular motion to make a 125 mm. (5”) diameter circle.

Cook the tomato omelette on a medium flame. Pour ½ tsp of oil on top of the tomato omelette especially the edges.

Flip and cook till golden brown spots appear on both the sides.

Remove the Eggless Tomato Omelette in a serving plate.
